Lemon Jello Cake with Lime Glaze

This is my Grandma Roselle Grunewald's Lemon Jello Cake.  I've updated the recipe with a modern twist of Lime glaze made with Luchhador Lime Margarita Mix.


My grandma was a great cook, she used her hands to mix almost everything! She was featured in the local Corpus Christi, TX newspaper in the 1950's for her advanced homemaking and baking skills.

 She cooked from scratch, but she also took shortcuts.


Cake mixes were one of those shortcuts.  Plus, it was the newest greatest invention for the busy housewife back in mid-century America.

The original recipe that I am playing off of is called Lemon Jello Cake.



So, I present to you my version: Lemon Jello Cake with Lime Glaze...............


Prep Time:  20 minutes
Baking Time:  25 minutes
Baking Temperature:  350 degrees

Ingredients for the cake

1 box White Cake Mix (any brand)
1 package Lemon Jello (small box)
1/2 Cup canola oil (or vegetable oil)
1 Cup water
4 large eggs

Ingredients for the Glaze

3 tbsp butter
3 tbsp lime margarita mix
powdered (confectioners) sugar




Putting it All Together


The Cake

Grease a 9 x 13 pan with shortening.

Mix all the cake ingredients together:  cake mix,
lemon jello, oil, water, and eggs.  Mix on medium speed for 3 to 4 minutes.

Pour into your greased pan. Bake.

Let cake cool completely before making the glaze.

The Glaze

Put butter and margarita mix in a small pot on medium heat.
Melt together.  Once melted add powdered sugar 1/2 cup at
a time.  You should have a thin to medium consistency.

Let heat through on a very low boil for 1 minute.

Immediately glaze cake as it will harden quickly when cooled.
